1. Production Operations & Process Control

  • Execute, monitor, and control daily commissary production in accordance with approved recipes, production schedules, SOPs, and yield standards.
  • Ensure strict compliance with batch accuracy, portioning, production sequencing, and timelines.
  • Exercise authority to stop, delay, or reject production batches that do not meet approved quality, food safety, or process standards, with immediate reporting to the Commissary Manager.
  • Identify production inefficiencies, deviations, or risks and implement or recommend corrective actions.
  • Support stable, scalable, and disciplined commissary operations across all supported brands.

2. Quality Assurance & Food Safety Compliance

  • Enforce daily compliance with food safety standards, sanitation protocols, and quality control procedures.
  • Conduct in-process checks, finished product inspections, and retention sampling.
  • Monitor and verify temperature controls, sanitation schedules, allergen controls, and traceability documentation.
  • Act as first-level enforcement of quality and food safety standards within the commissary.
  • Support internal audits, external inspections, and regulatory compliance requirements.
  • While Quality Assurance defines standards and audit protocols, this role is responsible for daily execution and enforcement.

3. Cost, Yield & Efficiency Management

  • Monitor production yields, wastage, and variances against approved BOMs and cost standards.
  • Coordinate with Finance, Inventory, and Warehouse teams to validate consumption reports, variance analysis, and cost data.
  • Accountable for identifying recurring yield and cost variances and recommending corrective actions for management approval.
  • Support initiatives that improve efficiency while protecting product quality and food safety.

4. Cross-Department & Store Opening Coordination

  • Coordinate with Operations on production volume requirements, forecasts, and special orders.
  • Work closely with Purchasing and Warehouse to ensure raw material availability, substitutions, and inventory readiness.
  • Coordinate with Operations and Store Opening Teams to ensure commissary readiness for new store launches, menu rollouts, and capacity planning.
  • Track commissary readiness indicators, including product availability, production capacity, quality sign-off, and delivery timelines.
  • No store opening, soft opening, or commercial launch shall proceed without commissary readiness confirmation for product availability, quality, and capacity.

5. Documentation, Reporting & System Compliance

  • Maintain complete, accurate, and audit-ready production records, batch logs, temperature logs, sanitation records, and traceability documentation.
  • Ensure commissary SOPs, work instructions, and checklists are properly implemented and followed.
  • Prepare and submit production, compliance, and variance reports to the Commissary Manager.
  • Ensure documentation gaps or non-compliance issues are escalated within the same working day.

6. Escalation, Risk Management & Accountability

  • Escalate critical production, quality, food safety, or readiness risks to the Commissary Manager and relevant departments within the same working day.
  • Support investigations of production incidents, quality deviations, or safety breaches and recommend corrective actions.
  • Exercise professional judgment within approved policies and escalate decisions beyond authority limits to management.
  • Protect RFCI and its brands by acting immediately on issues that pose operational, legal, or reputational risk.

7. Technical Support & Continuous Improvement

  • Provide hands-on technical guidance to production staff on approved procedures, quality standards, and best practices.
  • Assist in controlled trials, process improvements, and new or revised product rollouts.
  • Act as a subject-matter resource for assigned product categories and commissary processes.
  • Support continuous improvement initiatives that enhance efficiency, consistency, and scalability.
